Headnote

Traditional pickling relies on passive diffusion over days. Here, we use vacuum compression to mechanically force the brine into the vegetables. As the pressure in the chamber drops, the air inside the vegetable’s cell walls expands and escapes. When the pressure returns, the brine rushes in to fill the void, creating a translucent, fully flavored pickle in minutes.

Teaching Idea: Temperature & Pressure. You cannot vacuum-seal hot liquids. Under a strong vacuum, water’s boiling point drops significantly (potentially boiling at room temperature), which creates a mess and damages the vegetable texture. Always chill your brine completely before compression.

Ingredients

The Vegetables (The Market Mix)

  • 150 g (1½ cups) Cauliflower, broken into tiny florets
  • 100 g (¾ cup) Carrots, peeled and sliced into coins (⅛ inch thick)
  • 75 g (½ cup) Celery, sliced on a bias
  • 50 g (¼ cup) Red Bell Pepper, small dice
  • 25 g (2–3 ea) Serrano or Jalapeño peppers, sliced into rings (seeds optional)

The Brine

  • 300 g (1¼ cups) Distilled White Vinegar
  • 200 g (¾ cup) Water
  • 50 g (¼ cup) Granulated Sugar
  • 12 g (2 tsp) Diamond Crystal Kosher Salt
  • 3 g (1 tsp) Mustard Seeds, whole
  • 2 g (1 tsp) Dried Oregano
  • 2 g (½ tsp) Red Chili Flakes
  • 1 Clove Garlic, smashed

The Finish

  • 30 g (2 tbsp) Extra Virgin Olive Oil (optional, for serving)

Mise en Place (Action Checklist)

  • Chill the Brine: The brine must be below 40°F/4°C before it touches the vegetables or the vacuum machine.
  • Sanitize Jars: Even for quick pickles, ensure your storage vessels are clean.
  • Select the Machine: Ensure your vacuum sealer is ready. If using a suction-style sealer (FoodSaver), prepare a method to prevent liquid aspiration (see Chef’s Notes).

Method

Phase 1: The Brine Synthesis

In a small saucepan, combine the vinegar, water, sugar, salt, mustard seeds, oregano, chili flakes, and garlic. Bring to a simmer over medium heat just until the sugar and salt have fully dissolved.

Why: We only apply heat to dissolve the solids and bloom the spices. We do not want to reduce the liquid. Remove from heat immediately. Transfer to a container and chill completely in an ice bath or refrigerator until it reaches 40°F/4°C.

Phase 2: The Vegetable Fabrication

Allow the brine to cool completely (ice bath or refrigerator to 40°F/4°C). Meanwhile, process the vegetables (cauliflower, carrots, celery, peppers).

Focus: Uniformity is key. The cauliflower florets should be no larger than a hazelnut to ensure the brine penetrates fully during the short compression cycle.

Phase 3: The Compression (The Infusion)

Place the raw vegetables into a large vacuum bag. Pour the cold brine into the bag, ensuring the vegetables are submerged.

Technique (Chamber Vacuum): Set the machine to 100% vacuum with a 2-second seal. Watch the liquid; if it starts to bubble violently, stop the cycle immediately.

Technique (Suction/Home Sealer): Use the “pulse” function or hang the bag over the edge of the counter so gravity keeps the liquid down. Stop suction just before liquid enters the machine and seal.

Phase 4: The Rest (Equilibrium)

Let the bag sit sealed for 20 minutes.

Why: The vegetables will look translucent (glassy). This indicates the air has been replaced by liquid. Cut the bag open and transfer the contents to a clean jar. Top with a float of olive oil if serving immediately.

Chef’s Notes

  • The “Boiling” Effect: If you see the cold brine bubbling in a chamber vacuum, it isn’t hot—it’s boiling due to low pressure. This is fine for a second, but prolonged boiling will evacuate flavor and moisture.
  • Suction Sealer Hack: If you don’t have a chamber vacuum, you can freeze the brine until it is a slush. Put the slush in the bag with the veg and seal. The solid ice prevents the machine from sucking up the liquid.
  • Storage: These are “Quick Pickles,” not shelf-stable canned goods. They must be kept in the refrigerator and consumed within 2 weeks.
