Foundation Curd (The Lemon Protocol)
A bright, glossy, egg-yolk curd — stabilized with xanthan gum for clean refrigerated storage — that powers tarts, filled pastries, and composed desserts across the brigade.

Headnote
Foundation Curd is the lemon-acid backbone of the pâtissier’s repertoire — a short-ingredient preparation that punishes inattention and rewards patience. Made with egg yolks only, it sets through protein coagulation rather than starch, producing a silky, clean-cutting gel that holds its shape in a tart shell without the floury aftertaste of crème pâtissière. The 0.5% xanthan gum addition, stirred in after the butter is mounted, is invisible in the finished curd — it contributes no detectable flavor or change in texture, but it prevents the weeping that causes a pooled ring of lemon liquid at the base of a refrigerated tart shell after 24 hours. Teaching Idea: Curd vs. Custard. In a starch-thickened custard (crème pâtissière), gelatinized starch networks carry the structure — you can boil it, stir it hard, and it holds. Curd sets through egg yolk protein coagulation alone. Citric acid partially denatures those proteins before heat is applied, lowering the coagulation temperature and producing a more tender gel that scrambles irreversibly if boiled. That is why curd is cooked low and slow, and why it is removed from the heat the moment it reaches nappé — not a moment after.
Ingredients
The Curd Base
- 4 large egg yolks (approximately 72 g)
- 100 g (½ cup) caster sugar
- 125 ml (½ cup) fresh lemon juice (approximately 3 large lemons)
- zest of 1 lemon (optional — adds aromatic brightness; omit for a cleaner flavor)
The Butter Mount
- 75 g unsalted butter, room temperature, cut into 1 cm cubes
The Stabilizer
- 1.8 g (approximately ⅓ tsp) xanthan gum — weighed on a precision scale; add at 0.5% of finished curd weight (approximately 370 g total → 1.8 g)
Mise en Place
- Juice and strain the lemons through a fine-mesh sieve; measure 125 ml.
- Zest the lemon directly over the sugar and rub together briefly with your fingertips to release the oils, then combine with the measured sugar.
- Cut the butter into 1 cm cubes; leave at room temperature until softened but not melted.
- Set a fine-mesh sieve over a heatproof bowl or jar at the ready — you will strain the finished curd immediately off heat.
- Weigh the xanthan gum on a precision scale; set aside.
- Have a whisk, a heavy-bottomed 1 L saucepan, and a digital thermometer within reach.
Method
Phase 1: Build the Base
In the saucepan, combine the egg yolks, lemon-infused sugar, and strained lemon juice. Whisk together until fully combined and the sugar has begun to dissolve — the mixture will appear pale yellow and slightly viscous. Do not add heat yet; you are building a uniform base so the proteins are evenly distributed before cooking begins.
Phase 2: Cook Low and Slow
Set the saucepan over the lowest possible heat. Cook, whisking constantly and pulling the whisk across the entire base of the pan — including the corners — to prevent the yolks from seizing against the hot metal. After 3–5 minutes, the mixture will begin to thicken noticeably: the whisk will start to leave brief trails on the surface, and the texture will shift from liquid to something closer to heavy cream. Do not rush this phase. Boiling will scramble the yolk proteins and produce a grainy, broken curd that cannot be recovered.
Why: The acid from the lemon juice partially denatures the yolk proteins before heat reaches them, which lowers the effective coagulation temperature of the curd. This is why curd sets at a lower temperature than a plain egg custard — and why it is more susceptible to rapid heat.
Phase 3: Mount the Butter
When the curd is thick enough to coat the back of a spoon cleanly — draw your finger through the curd on the spoon; if the line holds without the edges collapsing back, it is at nappé — remove the pan from the heat. Add the butter cubes two or three at a time, whisking each addition fully before adding the next. The curd will become glossy and slightly thicker as the emulsified butterfat is incorporated. If the curd cools enough to stop accepting the butter smoothly, return the pan briefly to the lowest heat for 15–20 seconds; do not let it simmer.
Phase 4: Add the Stabilizer
Add the lemon zest (if using) and the measured xanthan gum. Whisk vigorously for 30–45 seconds to disperse the gum completely — undispersed pockets will create gel lumps in the finished curd. Return the pan to very low heat and cook for an additional 2–3 minutes, whisking, until the curd returns to nappé and the surface appears smooth and uniform. The xanthan gum will not change the flavor or visual gloss; its function is entirely structural.
Phase 5: Strain and Set
Pour the finished curd immediately through the fine-mesh sieve into the waiting bowl or jar. This removes any threads of cooked yolk protein and any undispersed xanthan particles. Tap the container gently on the counter to release air bubbles. If filling tart shells, pour the curd while it is still warm (above 140°F/60°C) — at this temperature it is fluid enough to self-level in the shell. If storing, press a piece of plastic wrap directly against the surface to prevent a skin from forming, then refrigerate for a minimum of 2 hours before use. The curd will set to a firm, sliceable consistency as it cools.
Variations
Lime Curd Replace the lemon juice 1:1 with fresh lime juice (strained). Increase the sugar by 15 g (105 g total) to compensate for lime’s higher acidity and lower residual sweetness. Substitute lime zest for the lemon zest. The finished curd will be slightly more aromatic and more assertively acidic than the lemon base — adjust sugar by an additional 5–10 g to taste after tasting at nappé.
Orange Curd Replace the lemon juice with fresh-squeezed, strained orange juice. Reduce the sugar by 10 g (90 g total); orange juice carries more natural sweetness and less acid than lemon. Add 1 tsp orange blossom water off heat with the butter — stir through rather than cook, as the aromatic compounds are volatile and will dissipate under heat. Use orange zest in place of lemon.
Passion Fruit Curd Replace the lemon juice with strained fresh passion fruit pulp (pass through a sieve to remove seeds). Increase the sugar by 10 g (110 g total) — passion fruit is brighter and more intensely acidic than lemon. Omit the zest; passion fruit’s perfume needs no reinforcement. The finished curd will be a deeper golden color and notably more complex in aroma.
Grapefruit Curd Use 62 ml (½ of the measured volume) fresh grapefruit juice and 63 ml (½ of the measured volume) fresh lemon juice — this tempers grapefruit’s bitterness without erasing it. Increase the sugar by 20 g (120 g total). Add 15 ml (1 tbsp) Campari off heat with the final butter addition; the bitter-orange character of the aperitif deepens the grapefruit and adds complexity. This is an adult-register curd; do not serve it where the bitterness will read as a flaw.
Chef’s Notes
- Make-ahead: The finished curd holds refrigerated in a sealed jar for up to 1 week. It freezes well for up to 3 months; thaw overnight in the refrigerator, not at room temperature, and stir before use.
- Reheating: If you need to loosen refrigerated curd for piping or spreading, warm it in a double boiler over barely simmering water, or in 10-second microwave bursts, stirring between each. Never bring it to a boil to reheat — it will break.
- Pouring temperature: For tart shells, pour at or above 140°F/60°C. Below that temperature the curd begins to gel and will not level cleanly in the shell.
- Whole-egg variant: A simpler approach — 1 whole egg (approximately 50 g), 25 g lemon juice, 40 g sugar, 50 g butter — cooks faster and does not require a double-boiler setup, but the albumen introduces a slightly rubbery set and a less clean flavor. Acceptable for filled pastries where appearance is less critical; not recommended for finished tarts.
- Xanthan gum precision: 0.5% by total finished weight is the target. If you scale the recipe, weigh the finished curd before adding the gum and calculate accordingly. Too much xanthan at scale produces an unpleasantly gelatinous texture.
- Powering the brigade: This curd is the filling for 09-03 Lemon Blackberry Tart and 09-08 Lemon Curd Tart Mini.
Glossary
- Nappé: The consistency at which a sauce or curd coats the back of a spoon in a continuous, even layer, and a line drawn through it with a fingertip holds clean without the edges collapsing back. The French word means “coated” or “covered.”
- Coagulation: The heat-driven process by which egg proteins unfold and bond together, transitioning from a liquid to a set, gel-like structure. In curd, coagulation is the sole structural mechanism — no starch is involved.
- Xanthan gum: A polysaccharide hydrocolloid produced through bacterial fermentation of glucose. In small quantities (0.1–0.5% by weight), it functions as a stabilizer and syneresis inhibitor without contributing flavor or significantly altering texture.
- Syneresis: The weeping or “bleeding” of liquid from a gel as the protein or hydrocolloid network contracts during refrigerated storage. Xanthan gum inhibits this in egg-yolk curds.
- Mount (butter): The technique of incorporating cold or room-temperature butter into a warm sauce or curd by adding it incrementally while whisking, creating a stable, glossy emulsion. Synonymous with “monter au beurre” in classical French technique.
- Protein denaturation: The unfolding of a protein’s three-dimensional structure caused by heat, acid, or mechanical action. In curd, the citric acid in lemon juice partially denatures yolk proteins before heat is applied, lowering their effective coagulation temperature.
- Caster sugar: Finely milled white granulated sugar, finer than standard granulated sugar but coarser than powdered (icing) sugar. It dissolves more readily in cold liquids and uncooked batters than standard granulated sugar.
