Headnote

This module moves beyond the specific recipe to the fundamental mechanics of the dumpling. We explore three distinct binding mechanisms: the retrograded starch of the baked potato, the protein coagulation of ricotta (often called “gnudi”), and the hot-swelling gelatinization of semolina.

Teaching Idea: Moisture Management. The enemy of a light dumpling is excess water, which requires excess flour to bind, resulting in a dense, chewy texture. Every technique here — baking the potatoes, pressing the cheese, cooking the semolina paste — is designed to control water content before flour touches the board.


Ingredients

The Potato Base (Classic)

  • 500 g (4 large) russet potatoes (weight taken after baking and peeling)
  • 100 g (¾ cup) all-purpose flour, plus more for dusting
  • 20 g (1 yolk) egg yolk
  • 3 g (1 tsp) Diamond Crystal kosher salt

The Ricotta Base (The “Cloud”)

  • 450 g (1 lb) whole-milk ricotta (weighed before draining)
  • 150 g (1 ¼ cups) all-purpose flour, plus more for dusting
  • 50 g (½ cup) Parmigiano-Reggiano, finely grated
  • 50 g (1 large) whole egg
  • 1 g (¼ tsp) nutmeg, freshly grated
  • 3 g (1 tsp) Diamond Crystal kosher salt

The Semolina Base (Romana)

  • 500 g (2 cups) whole milk
  • 125 g (¾ cup) semolina flour
  • 50 g (3 ½ tbsp) unsalted butter
  • 50 g (½ cup) Parmigiano-Reggiano, finely grated
  • 20 g (1 yolk) egg yolk
  • 3 g (1 tsp) Diamond Crystal kosher salt

Mise en Place (Action Checklist)

  • Drain the ricotta: Place ricotta in a cheesecloth-lined sieve or tofu press. Weight it down and refrigerate for at least 1 hour to extract whey.
  • Prep the potatoes: Poke holes in the potatoes with a fork. They will be roasted in Phase 1 of the Method.
  • Prepare the tools: Set up a potato ricer (essential), a bench scraper, and rimmed baking sheets dusted with semolina or flour.
  • Sanitize: Clean a large work surface (wood or marble) for kneading and rolling.

Method

Phase 1: The Potato Dough (Moisture Evaporation)

Preheat oven to 375°F/190°C. Place the poked potatoes directly on the oven rack and bake until fully tender when pierced with a knife, approximately 1 hour.

While the baked potatoes are still hot, peel them carefully and immediately pass through a ricer onto your work surface.

Why: Ricing hot maximizes steam release. If the potatoes cool before ricing, the starch becomes gummy and sticky.

Spread the riced potato into a thin layer to let steam escape. Once warm to the touch (not hot), drizzle the egg yolk and sprinkle the flour and salt over the top. Use a bench scraper to “cut” the flour into the potato — do not stir. Once a shaggy dough forms, gently fold by hand, then knead until the dough is uniform and no flour streaks remain.

Sensory Cue: The dough should feel soft and slightly tacky, but not sticky. Do not overwork — excess gluten development makes the gnocchi rubbery.

Phase 2: The Ricotta Dough (Cold Binding)

In a large bowl, mix the drained ricotta, whole egg, grated Parmigiano-Reggiano, nutmeg, and salt until smooth. Sift the flour directly over the cheese mixture. Fold gently with a spatula or by hand. Add slightly more flour if the mixture is sticking aggressively, but stop adding as soon as you have a cohesive mass.

Why: Ricotta gnocchi are extremely delicate. The less you handle them, the more cloud-like the result.

Phase 3: The Semolina Dough (Hot Gelatinization)

In a medium saucepan, bring the milk, butter, and salt to a gentle simmer. Reduce heat to low. Rain the semolina into the milk while whisking constantly to prevent lumps. Switch to a wooden spoon. Cook, stirring vigorously, for 3–5 minutes until the mixture thickens into a stiff mass that pulls away from the sides of the pan.

Sensory Cue: The consistency should resemble stiff polenta — it holds its shape when pressed but is still pliable.

Remove from heat. Immediately stir in the egg yolk and Parmigiano-Reggiano until fully incorporated. Pour the hot mixture onto an oiled baking sheet or parchment paper. Spread into an even slab approximately 1 cm (½ inch) thick. Cool completely — refrigerate for 30 minutes to speed the process.

Phase 4: Shaping and Cooking

Potato & Ricotta (Dumplings): Cut the dough into 4 even sections. Roll each into a rope approximately 2.5 cm (1 inch) thick. Cut the rope into 2.5 cm (1 inch) segments. Optional: roll each piece over a gnocchi board or fork tines to create ridges. Drop into boiling salted water — done 30–60 seconds after they float to the surface.

Semolina (Discs): Once the slab is cold and firm, cut into discs or squares with a round cutter or knife. Layer in a buttered baking dish, top with more butter and Parmigiano-Reggiano, and bake at 400°F/200°C until golden and bubbly, approximately 15–20 minutes.


Chef’s Notes

  • The Freezer Trick: For potato and ricotta gnocchi, freeze on a sheet tray for 20 minutes before bagging. This prevents sticking and helps them hold shape when hitting boiling water.
  • Saucing: Potato gnocchi love tomato and pesto; ricotta gnocchi pair best with brown butter and sage; Romana loves Mornay or simple butter and Parmigiano-Reggiano.
  • Troubleshooting Potato: If the potato dough is sticky, the potatoes were not dry enough. Do not simply add more flour — it dilutes flavor. Bake longer next time, or bake on a bed of salt to draw out moisture.
  • Pillow (Nudi): The baseline shape. A simple segment cut from the rope with no further manipulation. Best for delicate doughs (ricotta) that cannot handle pressure.
  • Cut Log (Rustico): A sharp, cylindrical cut with no rounding of the edges. Very rustic; maximizes the “fluff” factor by avoiding compression.
  • Fork-Rolled: Rolled over the back of fork tines to create gentle, slightly irregular ridges and a concave back.
  • Gnocchi Board (Rigagnocchi): The professional standard. Rolled down a grooved wooden paddle for deep, precise, uniform ridges with maximum surface area for sauce capture.
  • Cavatelli: “Little hollows.” Formed by dragging a small piece of dough with two fingers against a wooden board. Creates a smooth, rolled shell shape with a hollow center.
  • Malloreddus (Gnocchetti Sardi): A semolina-based shape rolled on a fine board to create a tight, ribbed shell. Denser and chewier than potato gnocchi.
  • The Thumbprint: A thumb pressed deep into the center of the pillow, creating a cup reservoir designed to hold heavy ragùs.
  • Grater Rolled: Rolling the dough down the fine side of a box grater. Creates an aggressive, shaggy texture that grabs cheese sauces exceptionally well.
  • Chicche (“Gems”): Miniature hazelnut-sized gnocchi, left smooth. Designed for soups or broths where a large dumpling would overwhelm.
  • Gnocchi alla Romana: The semolina disc. Cut from a cooled slab rather than rolled. Flat surface area designed to crisp under a broiler.
  • Gnocchi Ripieni (Stuffed): A larger, flattened pillow folded over a filling. Sealed edges, bulges at center.
  • Pici di Patate: The linear gnocchi — dough rolled into thick, worm-like noodles rather than cut into segments.
