A high-utility, twice-cooked dough that relies on internal steam for massive expansion and a hollow center.

Headnote

The secret to a towering cream puff lies in the thermal state of the dough before the eggs are added. By cooking the flour in boiling liquid, we gelatinize the starches, allowing the dough to support a massive amount of moisture (from eggs) that will later flash into steam in the oven.

Teaching Idea: Physical Leavening. Unlike bread (yeast) or cake (baking powder), Choux uses the physical expansion of water vapor to create its structure. There is no chemical leavener — the lift is generated entirely by the steam trapped within the sealed dough skin.


Ingredients

The Panade (Base)

  • 120 g (½ cup) whole milk
  • 120 g (½ cup) water
  • 113 g (½ cup) unsalted butter, cut into 1 cm cubes
  • 3 g (1 tsp) Diamond Crystal kosher salt
  • 4 g (1 tsp) granulated sugar
  • 142 g (1 ⅛ cups) bread flour, sifted

The Emulsion

  • 230 g (~4–5 large) eggs, weighed without shells

Mise en Place (Action Checklist)

  • Preheat the oven: Set to 350°F/175°C.
  • Sift the flour: Ensure there are no lumps to prevent flour pockets in the final paste.
  • Whisk the eggs: Break the proteins thoroughly so they incorporate into the paste without streaking.
  • Prep the bag: Fit a pastry bag with a 1 cm (½ inch) round or star tip.

Method

Phase 1: Gelatinize the Starch In a medium saucepan, combine the milk, water, butter, salt, and sugar. Bring to a rolling boil over medium-high heat.

Why: The butter must be fully melted and the liquid at a full boil before the flour is added to ensure immediate starch gelatinization.

Remove from heat and add the sifted flour all at once. Stir vigorously with a stiff spatula until a cohesive dough forms and no dry flour remains.

Phase 2: The Film Stage Return the pan to medium heat. Cook the dough, stirring and mashing constantly, for 3–5 minutes.

Sensory Cue: Stop when a thin, starchy film forms on the bottom of the pan and the dough pulls away into a clean, smooth ball. This drying process is what allows the dough to absorb the maximum amount of eggs later.

Phase 3: Build the Emulsion Transfer the dough to a stand mixer fitted with the paddle attachment. Mix on low speed for 2 minutes to release steam and cool the dough to ~140°F/60°C.

Why: If the dough is too hot, the eggs will scramble on contact.

With the mixer on medium-low, add the eggs in four additions. Wait for the dough to become smooth and matte before adding the next portion.

Phase 4: Pipe and Bake Line a baking sheet with parchment. Pipe 15 g mounds (golf ball size) spaced 5 cm (2 inches) apart. Use a wet finger to gently flatten any tails to prevent burning. Bake in the preheated 350°F/175°C oven for 25–30 minutes until the puffs are deeply golden and feel light and hollow when lifted.

Do not open the oven door during the first 20 minutes — the drop in pressure will cause the puffs to collapse before the shell has set.


Chef’s Notes

  • Bread Flour vs. All-Purpose: We use bread flour for its higher protein content, which provides the structural scaffolding needed to hold the steam-inflated shape against collapse as the shell cools.
  • The V-Test: When you lift the paddle from the finished dough, it should fall slowly, leaving a “V”-shaped tail of dough hanging from the blade. If it is too stiff, whisk one extra egg and add it 1 tablespoon at a time until the texture is achieved.
  • Storage: Baked, unfilled puffs can be held at room temperature for up to 8 hours or frozen airtight for up to 1 month. Re-crisp at 350°F/175°C for 5 minutes before filling.
