Ingredients

The Beef Foundation

  • 3175 g (7 lbs) beef chuck, hand-cut into 1 cm cubes
  • 1360 g (3 lbs) beef chuck, coarse-ground (10 mm)
  • 60 g (4 tbsp) high-smoke point oil (tallow or avocado oil)

The Umami Base

  • 1.5 L (6 cups) fortified beef stock
  • 500 ml (2 cups) beef demi-glace
  • 45 g (3 tbsp) red miso paste
  • 30 ml (2 tbsp) fish sauce
  • 20 g (2 tbsp) Triple Cocoa Blend (unsweetened)

The Aromatics & Spices

  • 3 large yellow onions, finely diced
  • 4 poblano peppers, seeded and finely diced
  • 10 cloves garlic, minced
  • 50 g (½ cup) “Competition Blend” chili paste (Ancho, Guajillo, Pasilla)
  • 4 packets Sazón with Culantro y Achote
  • 30 g (3 tbsp) ground cumin
  • 15 g (2 tbsp) Mexican oregano
  • 10 g (1 tbsp) Smoked Red Pepper Blend (Café Athena house blend)

The Finish

  • 60 ml (¼ cup) apple cider vinegar
  • Diamond Crystal kosher salt, to taste

Mise en Place (Action Checklist)

  • Prep Proteins: Hand-dice 7 lbs (3175 g) of beef chuck into 1 cm cubes; process 3 lbs (1360 g) of beef through a 10 mm grinder plate.
  • Construct Chili Paste: Stem, seed, and toast dried pods; rehydrate and blend until smooth.
  • Fortify Liquids: Whisk miso, fish sauce, and cocoa into the beef demi-glace and stock.
  • Aromatic Prep: Finely dice onions and poblano peppers; mince garlic.
  • Station Setup: Measure apple cider vinegar, Sazón, and dry spices.

Method

Phase 1: Thermal Maillard Optimization. In a large heavy-bottomed pot or commercial kettle, heat oil until it is shimmering. Sear hand-cut beef cubes in small batches until a deep brown crust forms. Remove and set aside. Brown the coarse-grind beef until fully rendered and crumbly.

Phase 2: The Aromatic Build Reduce heat to medium. Sauté onions and poblano peppers in the rendered beef fat for 8–10 minutes until translucent. Add garlic and cook for 1 minute.

Phase 3: The Bloom Add cumin, oregano, Sazón, cocoa, and Smoked Red Pepper Blend. Stir constantly for 2 minutes to activate fat-soluble volatile oils.

Phase 4: The Long Simmer Deglaze with the fortified liquid mixture and chili paste. Return all beef to the pot.

  • Standard: Bring to a boil, then reduce to the lowest simmer. Cook partially covered for 4–5 hours until meat is fork-tender.
  • Pressure Option: Transfer to a 12-qt pressure cooker; cook on High Pressure for 35 minutes, and allow the cooker to release naturally.

Phase 4a: The Cold-Cure Option (Optional)

  • Process: Post-simmer, cool to room temp, then refrigerate 12–24 hours.
  • Re-Thermalization: Heat over low-medium; simmer for 45–60 minutes to re-establish nappé and stabilize the emulsion.

Phase 5: The Acid Finish Stir in the apple cider vinegar. Taste and adjust with salt. Let rest for 30 minutes before serving. Expect 2–3 tsp Diamond Crystal at the end, added gradually to taste. Add vinegar off the heat, then simmer 5 more minutes if you want it slightly softened.

Chef’s Notes

  • The “Wait” Factor: Chili is a colloidal suspension that improves as proteins and fats stabilize; the Cold-Cure phase is highly recommended for competition entry.
  • For competition service, hold above 140°F and stir occasionally to maintain nappé and prevent scorching.
