Pressure-Gelatinized Polenta
Ultra-creamy, no-stir cornmeal finished with the mantecatura technique

Headnote
Traditional polenta requires 45 minutes of constant agitation to prevent scorching and ensure even hydration. By utilizing a pressure vessel, we raise the boiling point of water, forcing liquid into the dense corn endosperm rapidly. This results in a fully gelatinized, creamy suspension without the labor, finished with a classic high-fat emulsion to halt retrogradation. Teaching Idea: Pressure Gelatinization. At standard atmospheric pressure, water boils at 212°F/100°C. A sealed pressure cooker raises that to roughly 250°F/121°C — hot enough to fully explode starch granules in the corn endosperm in 15 minutes rather than 45, with zero stirring required.
Ingredients
The Grain Base
- 1000 g (4 cups) Water (or light Chicken Stock)
- 4 g (1 tsp) Baking Soda (optional, for softening corn skins)
- 200 g (1 ¼ cups) Coarse Yellow Polenta (Cornmeal)
- 8 g (2 tsp) Diamond Crystal Kosher Salt
The Mantecatura (Finishing)
- 56 g (4 tbsp) Unsalted Butter, cold and cubed
- 60 g (1 cup) Parmigiano-Reggiano, finely grated
- 60 g (¼ cup) Mascarpone Cheese (optional, for ultra-rich texture)
- Freshly cracked Black Pepper, to taste
Mise en Place
- Check the seal: Ensure the pressure cooker gasket is clean and the valve is free of debris.
- Grate the cheese: Microplane the Parmesan into a fluffy pile (do not use pre-grated).
- Cube the butter: Cut cold butter into small cubes and return to the fridge until the final step.
- Boil the water: If using an electric kettle, pre-boil the water to speed up the pressurization phase.
Method
Phase 1: The Suspension Set your pressure cooker (electric or stovetop) to “Sauté” or medium-high heat. Add the Water, Baking Soda, and Salt. Bring to a rolling boil.
Once boiling, slowly stream in the Polenta while whisking vigorously and constantly. Why: This disperses the starch granules before they swell. If you add cornmeal to cold water or dump it in all at once, it will form instant clumps that the pressure phase cannot fix.
Phase 2: High-Pressure Hydration Continue whisking for 1 minute until the mixture begins to thicken slightly and bubbles “spit.” Secure the lid immediately and set the valve to “Sealing.”
Set to High Pressure for 15 minutes. Note: If using an electric pressure cooker, the “warm-up” time counts toward hydration. If using stovetop, lower heat to a maintainable simmer once pressure is reached.
Phase 3: Depressurization and Agitation When the timer sounds, allow for a Natural Release for 10 minutes. Why: Quick-releasing viscous starches can cause the liquid to foam up through the valve, creating a mess and safety hazard. After 10 minutes, vent any remaining steam and remove the lid. The polenta will look separated (water on top, solids on bottom)—this is normal.
Phase 4: The Mantecatura Switch the heat back to “Low” or “Keep Warm.” Whisk the mixture vigorously. It will instantly come together into a smooth, thick porridge.
Add the cold Butter, Parmigiano-Reggiano, and Mascarpone. Whisk until the fats are fully emulsified and the polenta is glossy. Taste for seasoning. Sensory Cue: The texture should be “nappe”—coating the back of a spoon without running off immediately, but not stiff enough to stand up on its own.
Variations
- Garlic Infusion: Add 2 whole crushed garlic cloves to the water in Phase 1. They will dissolve into the mash under pressure.
Chef’s Notes
- The “Set” Point: Polenta firms up rapidly as it cools (retrogradation). Serve immediately. If it stiffens in the pot, whisk in 2 tbsp of hot water or milk to relax the starch network.
