Stabilized Cacio e Pepe

Headnote
This recipe solves the biggest problem with Cacio e Pepe: the sauce breaking. Traditional recipes rely on pasta starch and luck to emulsify the cheese. We remove the luck by using Sodium Citrate, a “melting salt” that chelates calcium ions in the cheese, preventing the proteins from tightening and separating. Ingredients
The Sauce Base
- 100 g (3.5 oz) Pecorino Romano, finely grated
- 5 g (1 tsp) whole black peppercorns
- 4 g (¾ tsp) Sodium Citrate
- 60 ml (¼ cup) water (or milk for extra richness)
- 15 ml (1 tbsp) neutral oil or butter (optional, for gloss)
The Pasta
- 250 g (8.8 oz) spaghetti, bucatini, or tonnarelli
- salt (for pasta water)

- Finely grate the Pecorino Romano (use a Microplane for best melting).
- Crush whole peppercorns (mortar and pestle is best for jagged, coarse distinct bits).
- Weigh the Sodium Citrate precisely (a micro-scale is recommended).
Method
Phase 1: Bloom the Pepper. In a dry skillet or sauté pan over medium heat, toast the crushed peppercorns for 1–2 minutes until highly aromatic. Add a splash of water (about 30ml) to stop the cooking and create a “pepper tea.” Set aside. Why: Toasting releases the essential oils (piperine), making the pepper flavor complex rather than just spicy.
Phase 2: Construct the Cheese Base. In a small saucepan, combine the 60ml water (or milk) and the Sodium Citrate. Bring to a simmer to dissolve the salt. Gradually whisk in the grated Pecorino a handful at a time. Why: The citrate needs to be dissolved in the liquid before it touches the cheese to effectively interact with the proteins.
Phase 3: Emulsify. Continue whisking the cheese mixture over very low heat until completely smooth. It should look like a thick fondue or queso. Remove from heat. Visual Cue: The sauce will appear glossy and uniform. If it looks too thick, add 1 tsp of water. It will not separate thanks to the citrate.
Phase 4: Cook the Pasta. Bring a large pot of salted water to a boil. Add the pasta and cook until underdone by 2 minutes (it should have a raw “bone” in the center). Reserve 1 cup of starchy pasta water.
Phase 5: The Marriage (Mantecatura). Transfer the pasta directly into the skillet with the toasted pepper. Pour the cheese base over the pasta. Toss vigorously over medium heat, adding splashes of reserved pasta water as needed to coat the strands. Why: Finishing the pasta in the sauce allows it to absorb the flavor and shed surface starch, thickening the sauce further.
Phase 6: Plating. Twist the pasta onto warm plates. Top with extra fresh cracked pepper and a dusting of Pecorino. Serve immediately.
Chef’s Notes
- Why not just use starch? Traditional Cacio e Pepe relies entirely on pasta starch to emulsify the cheese. This works — when it works. The sodium citrate method produces identical results every single time, regardless of humidity, pasta brand, or starch concentration.
- Sodium Citrate Source: Available at specialty food stores or online. It is inexpensive and shelf-stable. A small bag lasts months.
