Headnote

This dish retains the soul of a classic Caprese—sweet tomato, rich dairy, and acidic vinegar—but completely alters the delivery mechanism. We replace the slice of tomato with “caviar” that bursts on the palate, and the vinegar is transformed into a stable gel that won’t run on the plate. Teaching Idea: Direct Spherification. A liquid containing sodium alginate is dropped into a calcium bath. The calcium ions cross-link with the alginate polymers to form a gel skin from the outside in, creating a membrane that bursts on the palate.

Ingredients

Balsamic Fluid Gel

  • 150 ml Balsamic vinegar (high quality)
  • 50 ml Water
  • 15 g (1 tbsp) Sugar or glucose syrup
  • 2 g (½ tsp) Agar-agar

Tomato Caviar

  • 600 g (21 oz) Very ripe tomatoes (or canned San Marzano)
  • 4 g (¾ tsp) Sodium alginate (0.8% of liquid weight)
  • 1 g (pinch) Citric acid (optional, for brightness)
  • Salt, to taste
  • 5 g (1 tsp) Calcium chloride
  • 500 ml (2 cups) Water (cold, for the bath)

Assembly

  • 250 g (8 oz) fresh mozzarella or burrata
  • 1 French baguette, sliced on the bias and toasted
  • Fresh basil leaves (small)
  • Extra virgin olive oil (EVOO)
  • Smoked salt or Maldon flake salt

Mise en Place (Action Checklist)

  • Puree and strain the tomatoes to extract the liquid (tomato water).
  • Hydrate the sodium alginate in the tomato base (requires blending).
  • Rest the tomato base in the fridge to de-gas (remove air bubbles).
  • Prepare the calcium chloride bath and a rinsing water bath.

Method

Phase 1: Construct the Balsamic Base

Combine balsamic vinegar, water, sugar, and agar-agar in a small saucepan. Whisk to disperse the powder. Bring to a boil over medium heat and hold a simmer for 30 seconds.

Why: Agar is a hydrocolloid that must be heated to 212°F/100°C to fully hydrate and activate its gelling properties.

Phase 2: Set the Gel

Pour the hot liquid into a shallow container. Let it cool at room temperature, then transfer to the fridge until it forms a hard, brittle jelly (approx. 30–45 minutes).

Phase 3: Prepare the Tomato Base

Blend the tomatoes thoroughly, then pass through a fine-mesh sieve or cheesecloth. You need approximately 400–500 g of liquid. Season with salt and citric acid. Sprinkle the sodium alginate over the liquid while blending with an immersion blender. Do not dump it in all at once.

Why: Alginate is very hydrophilic and will form clumps (“fish eyes”) if not sheared into the liquid vigorously.

Phase 4: De-gas the Base

Place the tomato-alginate mixture in the fridge for at least 1 hour.

Why: Blending introduces air bubbles. If you try to make spheres with bubbly liquid, they will float and be misshapen. The liquid must be clear of air.

Phase 5: Process the Fluid Gel

Once the balsamic jelly is set, cut it into rough chunks. Place them in a blender (or use a tall beaker with an immersion blender). Blend on high until the gel breaks down into a smooth, glossy puree. If it is too stiff, add water 1 teaspoon at a time. Transfer to a squeeze bottle or piping bag.

Phase 6: Spherify the Caviar

Dissolve the calcium chloride in the 500 ml cold water (The Bath). Fill a syringe or pipette with the tomato mixture. Drop droplets into the calcium bath. Allow them to “cook” (set) for 45–60 seconds.

Why: The calcium ions in the bath react instantly with the alginate on the surface of the droplet, creating a membrane. Leaving it longer creates a thicker skin; less time creates a more delicate “pop.”

Phase 7: Rinse and Transfer

Remove the pearls with a slotted spoon and transfer them immediately to a bowl of clean water.

Why: This stops the chemical reaction and rinses off the bitter calcium chloride flavor.

Phase 8: Assembly

Pipe a swoosh or dots of balsamic gel onto the plate. Arrange torn mozzarella and toasted baguette slices. Spoon the tomato caviar over the cheese (like a sauce). Garnish with small basil leaves, a drizzle of EVOO, and smoked salt.
